Automation must solve a defined constraint

A line is successful when its machines, people, buffers, and quality controls operate as one system. Buying isolated high-speed equipment can create idle capacity and move the bottleneck downstream.

Ten questions for the project brief

Document assumptions before requesting layouts or quotations.

  • Which products and recipe ranges must run?
  • What is required peak saleable output per hour?
  • What are the dough weight and size tolerances?
  • How many changeovers occur per shift?
  • Which steps currently limit output or quality?
  • What power, fuel, water, air, drainage, and extraction exist?
  • What labour and skill level will operate the line?
  • How will rejects, rework, and traceability be handled?
  • Who maintains the equipment and stocks critical parts?
  • Where can capacity expand without rebuilding the room?

Balance every stage on common units

Convert mixing, dividing, moulding, proofing, baking, cooling, and packing into kilograms, pieces, or trays per hour. Include cleaning, changeovers, planned stops, yield, and realistic utilisation.

Specify acceptance before purchase

Agree on the product, recipe conditions, run duration, output, weight tolerance, quality criteria, utilities, and responsibilities used for commissioning. Clear acceptance criteria turn a machine delivery into an operational handover.
