Maintenance protects the recipe too

Heat loss, worn belts, loose tooling, blocked burners, damaged seals, and inaccurate controls show up as uneven colour, longer cycles, poor dough development, and avoidable waste before they become a complete breakdown.

Build checks around frequency

Always follow the manufacturer's manual and isolate energy before authorised maintenance.

  • Daily: clean food-contact zones, inspect guards, note noise or leaks
  • Weekly: inspect belts, seals, fasteners, cables, filters, and safety switches
  • Monthly: verify controls, moving parts, ventilation, burner condition, and electrical connections
  • Planned service: document parts, readings, technician findings, and next due date

Make operators the early-warning system

Train teams to report changes in sound, vibration, temperature recovery, mix time, proofing, gas flame, or error codes. A simple log beside each machine creates evidence for faster diagnosis.

Stock intelligently, not excessively

Ask the supplier which consumables and wear parts are critical to uptime. Keep model and serial numbers, manuals, electrical drawings, warranty terms, and service contacts accessible to the production manager.
