Merchandising and food holding are one decision

The counter must protect the product while making it easy to see, choose, serve, and replenish. Cakes and cream pastries require appropriate refrigeration; breads may need ambient display; savouries may require controlled hot holding.

Ask for operating temperature and humidity performance in your store conditions—not only compressor size.
