Start with the menu, not the machine list

A bread-led bakery, a cake studio, and a cafe counter have different bottlenecks. List the products that must be available every day, their batch size, batches per shift, and peak demand. That production brief prevents attractive but unnecessary purchases.

The essential production zones

Build the room as a flow from receiving to storage, preparation, mixing, forming, proofing, baking, cooling, finishing, and dispatch. Cross-traffic wastes labour and raises handling risk.

  • Mixing: stand, planetary, or spiral mixer matched to dough type
  • Fermentation: controlled proofer for repeatable bread and bun timing
  • Baking: deck, convection, or rack oven matched to trays per hour
  • Cold chain: ingredient refrigeration, freezers, and display chillers
  • Movement: work tables, tray racks, trolleys, pans, and cooling space

Utilities to confirm before ordering

Record connected electrical load, phase availability, LPG or gas routing, ventilation, drainage, door width, floor loading, and service clearances. A machine that fits on a drawing may still be impossible to deliver, connect, or maintain.

Buy in phases without buying twice

Fund equipment that protects product quality and launch capacity first. Add automation when measured demand exposes a repetitive bottleneck. Ask for model dimensions, load, output assumptions, installation scope, warranty, spare availability, and operator handover in writing.
